Steak Fajita Salad

the best we've ever had.

  • 1 lb Steak
  • 1 Sliced Bell Pepper
  • 1/2 Medium Sliced Onion
  • 4 Minced Cloves Garlic
  • 1 Head Lettuce
  • 2 Cups Halved Cherry Tomatoes
  • 1/2 Cup Chopped Cilantro
  • 1 Sliced Avocado
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Heat skillet over medium heat.

Rub steak with spices & place in pan; cook 3 – 4 mins each side & place in aluminum foil for 10 mins.

Add pepper, & onions to pan & cook until tender, approx 8 mins. Add garlic & cook an additional min.

Slice steak & add to bowl with lettuce, tomatoes, cilantro, pepper/onion mix & avocado.

 

Dressing:

1/2 cup olive oil

Juice of 2 limes

1 tsp cumin

1/2 tsp chili powder

1/2 tsp salt

pinch of cayenne pepper
