Season chops with salt & pepper.
Heat oil & butter in large skillet over medium heat until butter is melted.
Add chops & cook 5 min per side. Transfer to plate & cover.
Add 1 Tbs butter to pan & melt. Stir in onions & pinch of salt. Cook 12 mins or until caramelized. Add garlic & thyme; cook 30 sec.
Pour in broth. Whisk in cream & simmer 1 min.
Return chops to pan. Reduce heat & cook 3 min, or until sauce is thickened.
Remove from heat & garnish with parsley & parmesan.
Onion Gravy:
1 Tbs butter
1 large onion, thinly sliced
pinch of salt
4 cloves garlic, minced
1/2 tsp thyme
1/2 cup chicken broth
1/4 cup cream
