Shepherd’s Pie

the best we've ever had.

  • 1 lb Ground Beef
  • 1 Large Diced Onion
  • 1 Large Diced Carrot
  • 2 lbs Potatoes
  • 1 Cup Beef Broth
  • 1 Tbs Tomato Paste
  • 1/2 tsp Thyme
  • 1/2 Tbs Parsley
  • 1 Cup Frozen Peas
  • 6 Tbs Butter
  • 1/2 Cup Milk
  • Salt

Preheat oven to 375.

Cook beef, onion & carrot over medium heat. Drain fat & add broth, tomato paste & thyme. Simmer 10 mins, or until juice thickens. Add peas & cook 2 more mins.

Pour mix into baking dish & set aside.

Meanwhile, bring potatoes to boil. Once cooked, mash with butter, milk & salt until smooth.

Spread mashed potatoes over meat mix.

Bake 30 – 35 mins. Let rest 10 mins.
