Rustic Strawberry Peach Galette

the best we've ever had.

  • 2 Sliced Peaches
  • 2 Cups Sliced Strawberries
  • 2 Tbs Sugar
  • 1 tsp Vanilla
  • 1 + 1/2 Cups Flour
  • 3 Tbs Sugar
  • 1/4 tsp Salt
  • 1/2 Cup Cubed Butter
  • 1/4 Cup Ice Water
  • 1 Lightly Beaten Egg
  • Sugar

Mix peach & strawberries with sugar & vanilla. Set aside to soak.

Whisk flour, sugar & salt. Cut in butter until resembles coarse meal. Add ice water, stirring with fork, until flour is moistened.

Gently knead dough in bowl a few times, then shape into ball & flatten into thick disk. Wrap in plastic wrap & refrigerate 1 hour.

Preheat oven to 425. Line baking sheet with parchment paper.

On lightly floured surface, roll dough into 12″ circle. Transfer dough to baking sheet.

Spoon fruit (not juices) to centre of dough, leaving 2″ border all around.

Gently fold edges over fruit, overlapping as necessary. Gently seal edges. Brush crust with egg & sprinkle with sugar.

Bake 25 – 35 mins, or until crust is golden brown.

Let cool before slicing & drizzle with vanilla glaze if desired.

 

Vanilla Glaze:

1 cup icing sugar

1 Tbs cream or milk

1/4 tsp vanilla
