Peach Cobbler

the best we've ever had.

  • 8 Peaches
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1 tsp Lemon Juice
  • 2 tsp Cornstarch
  • 1 Cup Flour
  • 1/2 Cup Divided Sugar
  • 1/2 Cup Divided Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 6 Tbs Butter
  • 1/4 Cup Boiling Water
  • 3 Tbs Sugar
  • 1 tsp Cinnamon

Preheat oven to 425.

In large bowl, combine peaches, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 tsp cinnamon, nutmeg, lemon juice & cornstarch. Toss to coat & pour into baking dish.

Bake 10 mins.

Meanwhile, combine flour, 1/4 cup sugar, 1/4 cup brown sugar, baking powder & salt. Blend in butter with fingertips until resembles coarse meal.

Stir in water until just combined.

Mix 3 Tbs sugar & 1 tsp cinnamon.

Remove peaches from oven & drop spoonfuls of topping over them. Coat with sugar & cinnamon mix

Bake 30 mins or until topping is golden.
