Preheat oven to 350.
Press parchment paper into 9″ square pan & spray lightly.
Crush graham crackers in food processor. Combine with sugar & butter. Bake 5 mins.
Beat cream cheese until smooth (about 1 min). Add egg, flour, lemon juice, lemon zest & sugar. Add food colouring to reach desired shade. Mix 2-3 mins.
Pour over crust & bake 25 mins, or until middle is no longer jiggly.
