Herb Chicken Skillet with Spinach & Tomatoes

  • 2 Tbs Olive Oil
  • 1 + 1/2 lb Chicken Breasts
  • 1 Medium Diced Onion
  • 1 Can(s) Undrained Diced Tomatoes
  • 1/4 Cup Water
  • 1 tsp Basil
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Oregano
  • 1/2 tsp Salt
  • 1 Package Baby Spinach

Heat oil in skillet over medium heat. Add chicken; cook & stir 10 mins or until browned. Add onion; cook & stir 5 mins or until softened.

Stir in tomatoes, water & seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover & simmer 3 mins.

Stir in spinach; cook 2 mins or until it starts to wilt.
