Cornbread

the best we've ever had.

  • 1 + 1/2 Cups Flour
  • 2/3 Cup Sugar
  • 1/2 Cup Cornmeal
  • 1 Tbs Baking Powder
  • 1/2 tsp Salt
  • 1 + 1/4 Cups Milk
  • 2 Lightly Beaten Eggs
  • 1/3 Cup Olive Oil
  • 3 Tbs Melted Butter

Preheat oven to 350.

Grease 9″ square baking pan.

Combine flour, sugar, cornmeal, baking powder & salt.

Combine milk, eggs, oil & butter. Add to flour mix until just blended.

Pour into pan & bake until pick comes out clean, about 35 mins.

 

*For corn muffins: spoon into cups until 2/3 full. Bake 18 – 20 mins.
