Chicken Fried Rice

the best we've ever had.

  • 2 Cubed Chicken Breasts
  • 2 Tbs Divided Butter
  • 3 Lightly Beaten Eggs
  • 2 Medium Diced Carrots
  • 1 Small Diced Onion
  • 4 Minced Cloves Garlic
  • 1 Cup Thawed Frozen Peas
  • 4 Cups Chilled Rice
  • 1/2 Cup Soy Sauce
  • 1 tsp Sesame Oil
  • Green Onion

Cook chicken in small amount of sesame oil until browned; set aside.

Heat 1 Tbs butter in skillet. Add eggs & scramble until cooked. Remove & set aside.

Add remaining butter. Add carrots & onion, & cook until tender. Add rice & peas & saute 5 – 10 mins. Rice should brown up a bit.

Add eggs & stir in soy sauce & 1 tsp sesame oil, & cook 1 – 2 mins. Taste & add more soy sauce if needed.

Serve with green onions.
