Chicken Schnitzel

the best we've ever had.

  • 4 Chicken Cutlets
  • 2 Cups Italian Breadcrumbs
  • 2 Eggs
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 Cup Parmesan
  • 4 Tbs Olive Oil

Pound chicken to 1/4″

Combine breadcrumbs & parmesan.

In another bowl, beat eggs & add salt & pepper. Dip chicken in egg & then breadcrumb mixture.

Warm olive oil in skillet over medium heat. Cook 2 at a time, turning once (approx. 3 mins per side).
