Chicken & Rice

the best we've ever had.

  • 4 - 5 Pieces of Chicken
  • 1 Diced Onion
  • 4 Minced Cloves Garlic
  • 2 Tbs Butter
  • 1 + 1/2 Cups Rice
  • 1 + 1/2 Cups Chicken Broth
  • 1 + 1/4 Cups Hot Water

Preheat oven to 350.

Scatter onion & garlic in baking dish & place butter in centre. Bake 15 mins (stir occasionally while baking).

Mix chicken rub & coat chicken.

Remove baking dish from oven. Add rice & mix. Place chicken over rice. Pour chicken broth & water over chicken. Cover with foil & bake 35 mins.

Remove foil & bake an additional 15 mins.

Stand 5 mins & fluff with fork.

 

*Note: If using boneless chicken, add when 10 mins remaining in 1st cook time (so in oven 25 mins).

 

Chicken Rub:

1 tsp paprika

1 tsp thyme

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp pepper
