Breakfast Casserole

the best we've ever had.

  • 5 Crumbled Breakfast Sausages
  • 1 Diced Onion
  • 1 Diced Bell Pepper
  • 4 Minced Cloves Garlic
  • 6 Eggs
  • 1/3 Cup Milk
  • 2 Cups Cheese
  • 1/4 tsp Pepper
  • 6 Diced Potatoes
  • Green Onion

Cook potatoes in frying pan.

Heat oven to 375.

Add sausage to a separate frying pan. Remove once cooked & add onion & bell pepper; saute 5 mins. Add garlic & cook an additional 2 mins. Pour veggie mix into sausage mix. Add potatoes & 1 – 1/2 cups cheese. Stir.

In separate bowl, whisk egg with milk & pepper. Add to potato mix.

Pour into baking dish. Spread remaining cheese on top & bake covered with aluminum foil for 20 mins. Remove foil & bake an additional 15 mins. Let rest 5 mins. Sprinkle with green onion.
