Thai Sweet Chili Chicken Stir-Fry

the best we've ever had.

  • 1 lb Cubed Chicken Breasts
  • 2 Shaved Carrots
  • 1 Chopped Green Pepper
  • 6 Minced Cloves Garlic
  • 2 Tbs Divided Olive Oil
  • 3 Tbs Cornstarch
  • 1 tsp Garlic Powder
  • 1/4 tsp Ginger
  • 1/4 tsp Red Pepper Flakes
  • 1 tsp Sesame Oil
  • 1 + 1/4 Cups Sweet Chile Sauce
  • 4 Sliced Green Onions

In large bowl, add chicken pieces & 1 Tbs olive oil. Add minced garlic, salt & pepper; rub into chicken.

Add cornstarch & mix until all pieces of chicken are coated.

Heat olive oil in small skillet over medium heat. Cook chicken in batches, making sure to not crowd the pan. Drain on paper towel.

In wok, heat sesame oil & another 1 Tbs olive oil over low-medium heat.

Add carrots & pepper; cook until tender. Add spices & stir to combine. Add chicken, then add sweet chile sauce & heat through.

Top with green onions & serve over rice.
