Preheat oven to 325.
Combine graham cracker crumbs, butter & sugar. Press into baking dish & bake 10 mins.
In large bowl, beat cream cheese & sugar until smooth. Beat in cream, lemon juice, flour, lemon zest, lemon extract & food colouring. Add eggs & beat on low speed just until combined. Pour into crust.
Bake 55 – 65 mins, or until centre is almost set.
Cool 10 mins.
